Slow Cooker Shredded Chicken

If you have shredded cooked chicken on hand, then you are winning at life. Having batches of precooked chicken will save you time, energy and stress on busy days.
It takes less than 5 minutes to toss this in the slow cooker and can yield several meals.
I like having things on hand I know that I can use instead of eating out, and having shredded chicken allows me to make everything from tacos to casseroles with little stress.

Ingredient Notes

  • You could also use boneless skinless chicken thighs if desired

Preparation Notes

  • Add all ingredients to slow cooker and cover and cook

  • Chicken is done when it reaches internal temperature of 165 degrees F and shreds easily with fork

Equipment Notes

  • I used a 3 quart regular slow cooker
  • You will need zipper freezer bags or stasher bags for storing leftovers in the freezer

Recipe Notes

  • You can easily halve or double this recipe as needed
  • Simply make sure the chicken is fully covered with broth

How To Store Leftovers

  • Let cool completely then store in air tight containers in fridge up to 3 days
  • Divide into 1/2 or 1 pound portions and freeze for up to 3 months

Ingredients
  

  • 2 pounds boneless skinless chicken breast
  • 3 cups chicken broth

Instructions
 

  • Add ingredients to slow cooker
  • Cover and cook on high for 3-4 hours or low for 6-8
  • Remove chicken breast and use forks to shred
