Slow Cooker Chicken and Sweet Potato Chowder

Sweet potatoes contain anti-inflammatory properties that help keep your gut, eyes, and brain in great shape! Chicken Sweet Potato Chowder is a tasty way to get more of those nutrients into your diet.

 

Chicken Sweet Potato Chowder is a little creamy, a little spicy, and a little sweet. The flavor combination will please most anyone! And, the spiciness can be adjusted to suit your tastes.

Ingredients You’ll Need To Make Chicken & Sweet Potato Chowder:

  • chicken thighs
  • sweet potato
  • frozen sweet corn kernels
  • chicken broth
  • garlic powder
  • onion powder
  • cumin
  • chili powder
  • paprika
  • cilantro
  • salt
  • heavy cream

How To Make Chicken & Sweet Potato Chowder In A Slow Cooker:

  1. Add all ingredients except cream to slow cooker
  2. Cover and cook on high 2-3 hours or low 6-8 hours
  3. Remove chicken once fully cooked and shred it
  4. Return chicken to slow cooker and heat through for 15 more minutes

 

Pro Tips:

This spiciness of this recipe can be adjusted to suit your family’s tastes. Adding more or less chipotle chili powder is all you need to do to! (1 teaspoon will be very spicy; 1/2 teaspoon will be mildly spicy)

If you like to meal prep, try cooking a whole chicken ahead of time and adding it pre-shredded or chopped into the chowder.

If every second counts during your busy mornings, you can often find prepared chopped sweet potatoes in many grocery stores.

Ingredients
  

  • 1 pound boneless skinless chicken thighs
  • 1 pound sweet potato, peeled and diced
  • 2 1/2 cups frozen sweet corn kernels
  • 2 1/2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried cilantro
  • 1/4 teaspoon salt (or more to taste)
  • 1/2 cup heavy cream

Instructions
 

  • Add all ingredients except cream to slow cooker

Notes

    Thank you for this recipe! I just made it this morning and it’s so different from other soups that I’ve made. I tried Asian spices (coriander and tumeric powder) and used coconut milk instead of heavy cream. I am pleasantly surprised how much I’m enjoying this soup and I know it will only get better as the week goes by.

    1. Hi! I’m sorry, I don’t have this information. It would vary wildly depending on the grocery store and area of the country. However, you could plug the ingredients into your favorite on-line grocery delivery service to get a good idea of the total cost.

    1. Hi Jan! You could certainly make this without the chicken. I’d either reduce the broth or add a can a beans so that it didn’t get to watery/thin. Let me know how it turns out!

    1. Chicken thighs are generally just juicier and offer a bit more flavor, but if you want to substitute chicken breasts that would be ok.

  4. I am looking at my spice rack and wondering, is the recipe calling for chili powder or chipotle powder? I don’t have a chipotle chili powder and don’t really remember seeing it anywhere before. Thanks!

    1. Hi Sabrina! It’s actually calling for chipotle powder, which will give it that unique smoky spiciness. I’m generally able to locate it at most grocery stores along with the spices, but I will update the recipe with an Amazon link as well if that helps!

    1. You could try coconut milk, though we haven’t tested it so I don’t know how it would impact the flavor. If you try it please let us know!
