Slow Cooker Caramelized Onion and Asiago Beer Dip

I told you this would happen. More recipes that include beer. Or maybe it’s more like I warned you? Anyway, I kind of get on a kick and I have to try everything under the sun until I get tired of it or I find the next shiny thing. Like Sriracha. Everywhere I look people are cooking up super good looking recipes using Sriracha. And I’ve never tried it. Not once (is that weird?). But for now let’s stick to cooking with beer. And this tasty Slow Cooker Caramelized Onion and Asiago Beer Dip. And all the wonderful salty things you can dip into it.

If you were searching for the best recipes to take to your office potluck or something of that nature I’m not sure how you got here. I’m thinking this won’t work. You know. Because of the beer. Unless that sort of thing is cool at your office and in that case please email me because I want to work there too! 🙂  But this would make a fabulous party dip when you are having friends over or you are headed to out to watch the game.

For this dip you should use your best ever favorite of all time beer. Because it is the star of the show. The caramelized onions and asiago are good but the beer shines through and needs to be something you would drink. I used Sam Adams Cold Snap…a current seasonal. It’s refreshing and lighter tasting and that’s how I like my beer. But you could really take this in so many different directions with a hoppier beer, a darker beer, really it’s all up to you.

I’m sorry…I know this recipe only uses a partial bottle of beer. Now…what to do with the rest of it? Hmmm…. I will leave you to think on it 🙂  While i get busy stuffing my face with chips and pretzels loaded up with this cheesy, oniony, delicious dip!

Slow Cooker Asiago Beer Dip

Slow Cooker Caramelized Onion and Asiago Beer Dip

Slow Cooker Caramelized Onion and Asiago Beer Dip would make a fabulous party dip when you are having friends over or you are headed to out to watch the game.

Ingredients

  • 1 cup diced yellow onion (about half a large onion)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 oz cream cheese
  • 1/2 cup asiago cheese
  • 1 teaspoon Worcestershire sauce
  • 4 oz beer

Instructions

  • Heat butter and olive oil in skillet
  • Add onions and cooked until nicely browned, stirring only occasionally
  • Add garlic, salt, pepper and thyme and continue to cook 1-2 minutes
  • Add onions and garlic to small crockpot
  • Add remaining ingredients and cook on low until melted and combined.

Notes

Serve with chips, pretzels or veggies

    I have never met such an interesting and unusual recipe before. At first I didn’t even understand when and with what it has to be eaten, but then I studied it in detail and will definitely keep this recipe. It is so unusual that the recipe includes beer! A very interesting sauce, I’ll definitely try to cook it soon. Thank you for sharing!

    How many servings does this make? Can I double the recipe? I have about 15 people in the recipe doesn’t look like it’s enough. It looks great!

      Hi Christine! Ugh, I can’t believe I didn’t at least note what size slow cooker I used for this and I made it so long ago. That being said, based on the ingredients I’d say yes, you could easily double and I’d use a 1.5 to 2 quart slow cooker. That should be about the right amount for 15 people assuming you will have some other appetizers as well. Enjoy!!
