Slow Cooker Buffalo Chicken Nachos

These aren’t your weird, orange cheesy nachos. No, sir! Buffalo Chicken Nachos are fun and different… and a little bit fancy! Just drizzle some ranch or blue cheese dressing over them and you’ve got comfort food that’s sure to impress anyone.

 

Simple is sometimes best. These nachos are quick and easy to make when you use my delicious Slow Cooker Buffalo Chicken that’s been prepared ahead of time. The chicken comes out juicy with just a bit of a bite. And, they’re filling enough to be served as an appetizer or a meal!

 

Buffalo Chicken Nachos are not your typical (heavy, greasy) nachos. Dare I say, they’re healthy! Romaine lettuce lowers cholesterol. Grape tomatoes and celery contain minerals that help lower blood pressure. The potassium contained within them helps your heart function by relaxing blood vessel walls. Heart healthy nachos, anyone?

 

If you want to make even healthier nachos, serve the chicken over rice or lettuce leaves.

Ingredients You’ll Need To Make Buffalo Chicken Nachos…

  • corn tortilla chips
  • cheddar cheese
  • celery
  • grape tomatoes
  • blue cheese crumbles (optional)
  • romaine lettuce
  • fresh cilantro

Substitute lettuce leaves for the chips if you’d prefer a low carb option.

Mild or sharp cheddar taste equally delicious.

How To Make Buffalo Chicken Nachos:

  1. If cold, reheat the buffalo chicken
  2. Layer chips onto a baking sheet or platter
  3. Top with chicken and cheese
  4. If desired, place in 350 degree oven for 5 minutes or until cheese melts
  5. Top with remaining ingredients as desired to serve

Pro Tips…

Thin and crispy tortilla chips keep these nachos tasting light and refreshing. However, they tend to break under the weight of the toppings. So, you may prefer a thicker chip.

Leave off the blue cheese if you don’t care for it. Buffalo Chicken Nachos taste amazing with or without it!
Before serving, drizzle with ranch or blue cheese dressing to give your nachos some extra zip.

  • 2 cups leftover Slow Cooker Buffalo Chicken
  • 12 oz corn tortilla chips
  • 4 oz shredded cheddar cheese
  • 2 celery ribs chopped
  • 1 cup sliced grape tomatoes
  • 1/4 cup blue cheese crumbles
  • 1 cup thin sliced romaine lettuce
  • 2 tablespoon fresh chopped cilantro

Instructions
 

  • If cold, reheat buffalo chicken
