Slow Cooker Honey Garlic Chicken Lettuce Wraps

It started out as a real treat from PF Chang’s and now it seems like everybody has them on the menu. I’m pretty sure I’ve never tried them anywhere else except for trying to make them at home. I’ve done several versions that were pretty much okay, but now I feel like I finally have a winner! Instead of trying to make a copycat version I’ve gone for more of a personalized version. And yum! These really work!

And sometimes I like to eat just as many as when I make them my meal and then take down a entire plate of Crispy Honey Chicken when I’m done! (By the way, don’t forget you can make Honey Crispy Chicken in the Crock too!)

These Slow Cooker Honey Garlic Chicken Lettuce Wraps have chicken breasts (or even better would be chicken thighs!), crispy water chestnuts, and a delicious sauce made with honey and plenty of garlic. Just the right combo!

Ingredients
  

  • 1 pound boneless skinless chicken breasts
  • 8 ounces can water chestnuts
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons blackberry jam seedless
  • 1 tablespoon cornstarch
  • 2 teaspoons minced garlic
  • 1/2 teaspoon chili garlic sauce
  • 1/2 teaspoon garlic powder

Instructions
 

  • Using a nice sharp knife cut the chicken into tiny pieces
  • Drain and finely dice water chestnuts
  • Place chicken and water chestnuts in crock
  • In a small bowl whisk together sauce ingredients
  • Pour over chicken mixture
  • Cook on low for 6-8 hours or high for 3-4

Notes

I cooked this in my 3.5 quart slow cooker on high for 4 hours.

    1. Hi Cathy! You can find it in the Asian food section at most all grocery stores. It comes in a fairly small bottle and is essentially made up of Thai chili peppers, garlic, vinegar and sugar. You can add it to stir fry and all kinds of dishes! You may be able to substitute Sriracha sauce although the flavor and texture would be slightly different. Hope that helps!

        1. It’s not too spicy. And you can always add a little less of the sauce to start and then add more when the chicken is done and you’ve tasted it if you want to spice it up a little more. Let me know how it turns out!

    We tried this earlier this week, and it was fantastic! I let the chicken marinate in the sauce overnight before cooking it, and it was wonderfully flavorful. We served it over quinoa instead of lettuce, but it wasn’t the right combination. I think I’d use rice or noodles next time! In any case, it’s a definite winner and a certain favorite. Thanks for sharing!
    PS Beautiful pictures… my version was definitely not that picturesque 🙂
