Do you love to grill but just don’t always have the time? I’ve got some delicious slow cooker recipes that will satisfy your BBQ craving without all the work!
Meet my new grill! I love her! But, even in summer life is busy so I only get the chance to use her once a week or so. I love trying out new recipes using the grill and always look forward to it, but to be honest, after that one day I need a few days to recover. It can be a lot of work. I do try to make extras to have leftovers to eat for lunch during the week, but the rest of our meals for the week are going to have to be easy. All summer long, my slow cooker stays on the counter, and I have learned to be creative in making recipes that are loaded with all our favorite summer flavors without all the extra work!
One of my all time favorites is Slow Cooker Memphis Rubbed Brisket (pictured at the top also). Just the right combo of seasonings give it enough smoky flavor and slow cooking it on low all day makes it so tender and juicy. Brisket is the perfect thing to make at the beginning of the week, because then you can eat it all week long on sandwiches, tacos, salads, just about anything!
Next up, ribs, obviously. These Slow Cooker BBQ Ribs are arguably the best I’ve had and they are so very easy to make! My teenager loves ribs, so I always win the day when I make these. What to do with the leftovers? Don’t worry, there won’t be any. Everyone will be licking their fingers after polishing these off instead.
Both of these recipes use my Memphis Rub Seasoning, and I’m not going to lie, I’m pretty proud of this spice blend I’ve created. I’ve used it on salmon, chicken, shrimp and I’m sure there are many other uses I will find for it all summer long. I now make a quadruple batch and store it in a glass jar and it’s gone before I know it. Try it and let me know what you come up with!!
And obviously, no BBQ meal would be complete without the perfect side dishes. Luckily, these can also be made in the slow cooker. So, whether you want them as simple sides to go with meals from the grill OR you want to have a couple of slow cookers going with main and side dishes, I’ve got plenty of options for you.
