I’m not sure what it is exactly that makes my kids go nuts, but whenever I say I’m making chicken drumsticks for dinner you’d think it was Christmas around here. Not that I will complain considering how easy it is to make these…. maybe we’ll just have them for dinner every night! This version in particular is super easy to make using a seasoning blend you can buy at pretty much any store and goes perfectly with my Summer Fresh Grilled Corn Salad.

Another thing I love about drumsticks is that you can buy a huge package and they are generally pretty inexpensive. When you have a teenage boy in the house, you can go through massive quantities of food rather quickly. Making up a big batch of these is pretty quick and I don’t have to worry about how many times he goes back for more.

I chose to brown these up a bit before slow cooking them to give them a nice crispy skin. Not only do they look prettier, it sears the seasoning on and makes them taste better too.

If you already have the grill going, you can toss these on the grill instead, but otherwise these are perfect for slow cooking all day. They also make great leftovers, so if you want something delicious to serve at a picnic, I suggest making up a batch ahead of time and then taking them along. Such an easy thing to serve to a crowd or when eating outside because you can eat them with your hands.

Ingredients
  

  • 3 pounds chicken drumsticks
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons southwestern seasoning blend

Instructions
 

  • Heat skillet (or multi-cooker) to medium-high heat
  • Whisk together olive oil, lime juice, and seasoning
  • Toss drumsticks with seasoning mixture to coat well
  • Sear for 3-4 minutes on each side or until lightly browned
  • Add to slow cooker and cook on high for 3-4 hours or low for 6-8 until chicken is cooked through

    Can’t wait to make this dish!!! It’s the dead of winter here in Chicago & my tastebuds need something not so heavy. Is there a certain brand of southwest seasoning you prefer? I’m also interested in pairing the pasta with it as well. Would you be willing to share that recipe as well? Thanks.

  3. This looks totally delish… I got earlier this week the recipe for the corn, avocado. tomato salad and I am looking forward to making that as well. Your picture above looks like it will pair off wonderfully. My only question now is… what is the pasta dish/recipe for the other salad in the photo? Looks delish as well to go with these other two recipes. Can you please send me the information? Would like to see if I can make this for the family for our BBQ on the 4th of July.
