What I Love About This Recipe

If you need to switch up your pasta routine, simple chicken spaghetti is the perfect one-pot meal that even the pickiest eaters will devour. This is the best chicken spaghetti recipe because:

  • It’s a budget-friendly meal for 4-6 hearty servings. It checks all the boxes for protein, carbs, and cheesy goodness! 
  • It’s not spicy, but the tomatoes and chilies give a little extra flavor kick.
  • You can adjust the ingredients to your liking – leave out tomatoes, or swap the spaghetti for penne or gluten-free spaghetti noodles.
  • It’s a variation from classic spaghetti and meatballs.
  • It doesn’t have to cook all day. Start it at lunchtime and you’ll have an amazing meal ready for dinner!

Ingredients Needed 

  • Butter – The browned butter and seasoning mixture really sets it apart from other spaghetti recipes. It’s delightfully rich and not greasy at all!
  • Garlic – Jarred minced garlic is super easy for slow cooker recipes. Browning it with the butter is the simplest extra step that adds so much flavor!
  • Seasonings – Just two extra seasonings add to the tastiness of this recipe – dried rubbed sage and salt. Sage is an herb that complements poultry dishes and dried rubbed sage is a coarser variety that deeply flavors the overall base of the chicken spaghetti.
  • Boneless skinless chicken breasts – I used two thawed chicken breasts, but I’ve also tried boneless skinless chicken thighs. Either can work!
  • Diced tomatoes with green chilies – Not all chicken spaghetti recipes use tomatoes and green chilies, but I like the added flavor of the combination. You can leave them out if you prefer, or just use plain diced tomatoes.
  • Chicken broth – I like to use bone broth in the slow cooker for the added nutrients, but you can use regular or unsalted as well.
  • Heavy cream – This is essential to developing the rich, creamy sauce that coats the noodles.
  • Shredded parmesan cheese – Shredded parmesan works well for slow cooker dishes because it melts easily and adds a complex layer of flavor. Add some extra on top of your finished dish!
  • Spaghetti noodles – Use 12 ounces of regular spaghetti noodles or penne noodles (although those may take a bit longer to cook). You can also swap gluten-free noodles and reduce the broth by ¼ cup, but be sure to monitor the cooking time since it will be slightly shorter. I used gluten-free noodles made from a whole-grain rice blend.

How To Make Simple Chicken Spaghetti In The Slow Cooker 

  1. Heat a skillet to medium-high heat.
  2. Cut the butter into 1 tablespoon pieces and add to the skillet.
  3. Let the butter melt until it starts to bubble, then begin to whisk it.
  4. Add garlic, sage, and salt to the butter. Continue whisking until the bubbles dissipate and the butter starts to develop brown specks and takes on a nutty aroma.
  5. Remove the skillet from the heat and continue to whisk for 1-2 more minutes while it cools.

  1. Add butter to the slow cooker along with chicken breasts, broth, and a can of diced tomatoes and chilies.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is fully cooked.
  1. Remove the chicken from the slow cooker and shred it with two forks.
  2. Add heavy cream, spaghetti noodles, and parmesan cheese to the slow cooker and press the noodles into the liquid until they are fully covered and start to soften.

  1. Return the chicken to the slow cooker and give everything a stir to combine.
  2. Turn the slow cooker to high and continue to cook for 30-40 minutes (stirring 2-3 times throughout) until the pasta is cooked to al dente.
  3. Serve with an extra sprinkle of parmesan cheese and parsley or as desired.

What To Serve With Simple Chicken Spaghetti 

With this simple chicken spaghetti recipe, you can keep the rest of the meal simple and delicious, too!

Serve a side of Caesar salad or mixed greens with fresh veggies and mix up an Easy Homemade Italian Dressing. Warm up your favorite breadsticks or rolls or toast some homemade croutons. While the pasta is cooking, sauté some carrots with honey for a sweet veggie side.

Top off chicken spaghetti with extra shredded parmesan cheese, cheddar cheese, or an Italian blend. Add some fresh chopped parsley if you like! 

Storing and Reheating

Portion chicken spaghetti into airtight containers and save for leftovers throughout the week! Store in the fridge for up to 3 days. Reheat in the microwave.

Because of the dairy and pasta combination, I don’t recommend freezing leftovers.

If you’d like to prep a few extra steps before dinner, melt and cool the butter and seasoning mixture and combine it with uncooked chicken and broth in a freezer bag. Store in the freezer for up to 3 months and defrost before continuing slow cooker directions.

Notes

  • Store leftovers in the fridge for up to 3 days and reheat in the microwave.
  • If noodles are not completely cooked or too dry at the end, add a little more broth and continue cooking while stirring occasionally.
  • If there is too much sauce, you can thicken it by making a slurry of 1 tablespoon cornstarch and 1 tablespoon of water. Stir it into the slow cooker mixture and let it heat through.
  • To make this recipe gluten-free, use gluten-free spaghetti noodles and reduce the broth by ¼ cup. Cooking time may be slightly less, so monitor in the last 30-60 minutes.

  1. Can chicken spaghetti be made in the oven? You can also make chicken spaghetti in the oven by using precooked chicken and cooked spaghetti noodles. Then:
    1. Preheat the oven to 375 ℉ and grease an oven-safe dish. 
    2. Prepare the butter and seasoning mixture in a skillet and add in cooked, shredded chicken. Add tomatoes and chilies, cream, broth, and shredded parmesan to the pan and stir until the mixture is combined and the cheese has melted. 
    3. Stir in cooked spaghetti noodles until all ingredients are combined. 
    4. Add to the dish and top with extra parmesan cheese. Bake at 375 ℉ for about 30-35 minutes until spaghetti is heated through and all cheese is melted.
  2. Can you freeze cooked chicken spaghetti? I don’t recommend freezing chicken spaghetti due to the textural changes from dairy and spaghetti noodles when defrosting.
  3. Can you add vegetables to this recipe? Veggies would be a great addition to chicken spaghetti! This recipe would work especially well with frozen mixed veggies like peas, carrots, green beans, and corn. Add to the slow cooker along with the chicken.
  4. Are chicken spaghetti and chicken tetrazzini the same thing? Chicken spaghetti and chicken tetrazzini are very similar, but tetrazzini can use wider noodles. Both dishes include cream-based sauces, and tetrazzini often incorporates mushrooms and additional vegetables.
