I can’t deny that I’m really enjoying the slightly cooler weather we’ve been having the last week or so. It’s making me dream of fall and crisp air and all things pumpkin and football. There is one thing for sure I will miss when summer is really gone, though. The fresh fruits and seasonal veggies. I tend to eat so much better all summer long because of the abundance of produce that’s in season. So, just for a little while longer, let’s hang on to summer, okay? Let’s make things like fresh peach salsas and smother them all over delicious juicy pork chops. Who’s going to join me?

I could eat this salsa all day on everything! It’s so simple yet so delicious because of the pairings of juicy sweet peaches, a bit of spicy jalapeño and some mini crunchy sweet peppers. Of course, we could never leave diced onions out of a salsa. And plenty of fresh cilantro and lime juice bring the flavors all together.

Next time I will make up a larger batch, because this salsa was gone in no time. I was hoping for leftovers to go with some chicken for lunch, but I was out of luck. I also think this would go really well with some blue corn tortilla chips. Okay, that’s it… I’m headed out to get some more peaches this afternoon. I can’t fight the craving, and when it’s a healthy one like this, why try?!

A few simple seasonings are all these pork chops need, just be sure you choose a thick cut and bone-in chop. Otherwise you may end up with dry chops, and nobody wants that. I browned these up in my multi-cooker to save a step (and an extra dirty pan) but you could also just use a nice  heavy skillet too if you are using a regular slow cooker. Browning is a must on this particular recipe, and another reason to be sure you get the thickest chops you can find.

Ingredients
  

For chops:

  • 4 thick cut pork chops
  • 2 tablespoons butter
  • 1 teaspoon dried rubbed sage
  • 1 teaspoon dried thyme
  • 1 teaspoon roasted garlic powder
  • 1/2 cup chicken broth

For salsa:

  • 3 ripe peaches
  • 1 jalapeno
  • 2 tablespoons red onion
  • 2 red mini sweet peppers
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • 1/2 teaspoon sea salt

Instructions
 

For chops:

  • Heat skillet or multi-cooker to medium-high heat
  • Melt butter in skillet
  • Season chops with seasonings, using hands to press seasoning into chops
  • Brown for about 3-4 minutes on each side or until golden brown
  • Transfer to slow cooker and add broth
  • Cover and cook on high for 3-4 hours or low for 6-8

For salsa:

  • Peel and dice peaches (remove pit)
  • Peel and dice onion
  • Remove ribs and seeds from peppers and finely dice
  • Toss together in bowl with lime juice, olive oil and salt (to taste)
  • Serve pork chops topped with salsa

    I loved these. I had already made a batch of mango peach salsa that I used instead. Pork chops were moist and tender.

  2. I made this and it was awesome. Although I changed the recipe a lil. My marinade was honey, apple cider vinegar , basil , rosemary leaves, Cajun spice , chilly pepper, whole oregano and paprika. The peach salsa made it come to life.. 5 stars

  3. This looks amazing! I have friends that are unable to eat pork do you think it would still be yummy with a bone in chicken breast?
