Slow Cooker Lemon Pepper Chicken with Asparagus

Slow Cooker Lemon Pepper Chicken and Asparagus in white platter with lemon slicesIf you look at Pinterest much you’ve probably noticed that one pot meals are all the rage. And since I like to keep the dirty dishes to a minimum this is a trend that I can so get on board with. I love the idea of everything coming together all at once and just walking in the door or even just into the kitchen to a dinner that is waiting on me. Since a lot of the meals include some kind of pasta or rice I decided that for this go-around I would try something different and go more in the direction of low-carb. So here is my version of a one-pot meal in the slow cooker… a simple Lemon Pepper Chicken with Asparagus!

But you know what, it turned out great! Especially considering the fact that I didn’t have to do anything else to get it ready once my main dish was done!

So I went for the same effect with the chicken and together they were a perfect little delicious pair! A nice and light dinner for those days when you want something healthy.

Slow Cooker Lemon Pepper Chicken and Asparagus in white platter with lemon slicesI used chicken thighs in this recipe (boneless, skinless) which I highly recommend. They have such great flavor and never seem to dry out. If you used chicken breasts they may come out a little dry since we are not adding any extra liquid for fear of making the asparagus soggy (yuck!).

Here is my version of a one-pot meal in the slow cooker... a simple Lemon Pepper Chicken with Asparagus!

Ingredients
  

  • 1 pound boneless skinless chicken thighs
  • 1 tablespoon + 1 teaspoon olive oil
  • 1 lemon
  • 1 pound asparagus trimmed
  • 1/2 teaspoon lemon pepper seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon thyme

Instructions
 

  • Place chicken in crock
  • Drizzle with 1 tablespoon olive oil
  • Sprinkle with thyme and half of the salt
  • Slice lemon and place over chicken
  • Top with asparagus
  • Drizzle with 1 teaspoon olive oil
  • Sprinkle with remaining salt and lemon pepper seasoning

I made this in my 5 quart slow cooker on low for 6 hours

    This chicken was so amazing!
    I did change it up a little bit for my family’s liking…
    I coated the chicken in lemon pepper seasoning and pan seared it in a little bit of olive oil to lock in some flavor before placing them into my crockpot. I also placed 1 cup of water and a chicken bouillon cube into the same pan I seared my chicken in to help collect the pan drippings and added that to my crockpot with the pan seared chicken. I didn’t seem to have any issues with cooking the chicken with a whole sliced lemon as some commenters seem to have, it was not too much for our taste buds. It was perfect! And the added liquid helped keep the chicken moist and prevented drying out.
    I also left the asparagus out until the last hour of cooking to prevent the asparagus from falling apart too much (just a family preference).
    Definitely would make this again!!!

    Dewy, it sounds like your fiance, could use some cooking lessons. I came across this recipe and prepared it for my wife and I.
    After reading your comment. I only used half a lemon, as to not over power the flavor. The dish was fantastic, but wish I had used the whole lemon

    WARNING!! PEOPLE BEFORE YOU COOK THIS DO NOT ADD A WHOLE LEMON TO THE CROCKPOT!!!This was the worst written recipe I’ve ever seen on earth. Even in your picture, I can tell you didn’t slice a WHOLE lemon to cook with the chicken. You added fresh lemon slices for decoration, you probably didn’t slice the the whole lemon like it says in your recipe. It’s so awful, and my fiance ruined dinner because of you. You owe me, so please revise your damn recipe before you ruin other people’s dinners too! Tell them to cut a few lemon slices, place in Crock-Pot, drizzle some lemon juice on it, and that’s it. A whole damn lemon??!!! I would have never cooked your recipe step by step, but there are some people looking for recipes that work, so maybe clearly state how to prepare it correctly, rather than blatantly state the ingredients. May God have mercy on your crock pot. I would rate this with no stars if I could. REWRITE THE RECIPE CLEARLY

    1. I am so sorry you didn’t care for the recipe. When Jennifer created the recipe she did put an entire lemon in her slow cooker just as the recipe states. When she took the pictures she added fresh lemon on top of the chicken for presentation purposes only, but there was an entire lemon used in the slow cooker while cooking. I apologize that this recipe was not satisfying.

Damn dewy dude you are rude as hell maybe your fiancée didn’t follow the recipe right no where in these steps did it say use a whole chicken so blame ya lady for dinner being ruined not this woman you’re lady decided to clearly vear off the actual steps of how to makes this or ya lady just can’t cook right don’t attack this woman like that that’s rude

    This is the first meal I ever made in a crockpot and i loved it! The chicken thighs were a great choice and were super tender and tasty. I added some brown rice on the side too! Thank you so much for sharing!

    This turned out so yummy for me! I used boneless chicken breasts because that’s what I had on hand. I seasoned the chicken with salt and pepper. Added 1/2 cup of chicken broth and 3 tsp of fresh lemon juice. Placed sliced lemons on top and let it cook on high for 4 hours. Placed the asparagus on top of the lemons for about 30-45 min and it was cooked perfectly! I will definitely be making this again. Thanks for sharing!

    I loved this recipe! I used boneless/skinless thighs, as suggested. I like my asparagus more on the al dente side, so I didn’t add it until the last hour of cook time.

    Followed recipe with the mere substitution of dried basil for thyme. Tastes quite foul. Although the chicken is indeed tender, the lemony flavor is quite ghastly. The asparagus is stringy and soggy. Do not make this dish for someone you love.

    1. Thanks for letting me know Brandon! Indeed if you don’t love lemon this will not work out for you! And doesn’t it stink that asparagus season has already come and gone for the most part?! I’ve had a super hard time finding any good asparagus lately 🙁

    2. Same for me . . . followed the recipe (breasts instead of thighs) adding fresh minced garlic. Tastes terrible. Although the chicken is indeed tender, the lemony flavor is quite ghastly. The asparagus is stringy and soggy. Dang, and I didn’t have a backup plan since I have never had a bad crockpot recipe. It’s just not for this family!! Plus, mine was done in 3 hours, on low, not 6.

      1. So sorry you didn’t care for it Patty! That stinks 🙁 Please note I definitely do don’t recommend chicken breasts in this meal as they have a completely different flavor and cooking time. I hope you can find something else that works out better.

      On checking out my ingredients, I believe the lemon peel I used was rancid, so my original complaint should be disregarded. In fact, it should be taken down. I realized my mistake when I used the lemon rind for another recipe. Sorry.
