So Valentine’s Day is on a Friday this year. If you celebrate..what are you doing? Going out to fight the restaurant crowds? No way!!! Cook at home! But wait, who really wants to work all day and then come home and cook a meal fancy enough to impress your sweetheart? Come on…you know I’ve got a better solution that that for you! A fancy(ish) and certainly impressive Honey Rosemary Steak with Potatoes. In the crockpot. You know it!
And seriously friends…this is SO SIMPLE. Yes, I’m yelling 🙂 Because it couldn’t get much easier than this. AND? It’s so good! As written this recipe should serve four….unless you have hearty eaters, then I would up the amount of meat and potatoes per person. I had about 1/4 pound meat and 3-4 baby potatoes for each of us. We were full but probably would have stuffed ourselves some more if there had been any leftovers.
I’m going to tell you to cook this on low all day. I think the longer the steak cooks the more tender it will be. Ours was fork tender, as were the potatoes. I used my indoor grill to grill up some slices of zucchini which were perfect with this. Another option would be some sauteed spinach. I’m going to find a way to make that fancy creamed spinach that you get at a steakhouse in the slow cooker. I’m determined…if no other reason than just to say I can do it.
Well, it’s all of about 5 degrees here today with a foot of snow on the ground. In no way, shape, or form am I planning to leave the house and the husband (unknowingly) ate the orange I was saving for Slow Cooker Orange Chicken so I will be in creating mode today. What do I have in my house that I can use to make a meal? Well, l guess we will see if I come up with something good enough to share with all of you!!
- 1 pound sirloin steak, cut into large chunks
- 1 to 1½ pounds baby gold potatoes (about 3-4 per person)
- ½ teaspoon kosher salt
- ¼ teaspoon fresh ground pepper
- ½ cup beef or vegetable broth
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried rosemary
- Place cut up steak and potatoes in crockpot
- Sprinkle with salt and pepper
- Mix remaining ingredients in bowl or measuring cup
- Pour over the top
- Cover and cook on low 6 - 8 hours
