Slow Cooker Classic Baked Beans
I know it’s not quite BBQ season yet but that hasn’t stopped me from slow cooking up some delicious baked beans to enjoy along side our dinners. This is such a simple side dish that goes so well with so many different kinds of meals and they are also the perfect way to use up any of that leftover pulled pork (or beef or chicken for that matter). Give these easy classic beans a try and I think they will become a regular in your rotation too!
Whenever I have some leftover pulled meat I just store it in some little baggies in the freezer so that it won’t go to waste. But it seems like no one ever really goes to the effort to thaw it out and make a sandwich. That’s why I like to re-purpose it!
Crisp up a couple slices of bacon and toss your leftover meat in the crock along with some pantry staples. The flavors will slow cook together all day for side dish your whole family will love.
Perfect along side sandwiches, BBQ meat, hamburgers, really the options are endless! Re-purpose those leftovers AND enjoy a new favorite side dish!
Slow Cooker Baked Beans
Equipment
- skillet (optional)
- Slow Cooker
Ingredients
- 2 slices bacon
- 6 oz leftover pulled pork
- 30 ounces beans drained and rinsed (I used white navy beans)
- 14.5 ounces crushed tomatoes
- 1/4 cup brown sugar
- 1 teaspoon salt
- 1 teaspoon dried ground mustard
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Instructions
- In a skillet, microwave, or oven, cook strips of bacon until lightly crispy
- Let bacon cool enough to handle, then crumble slices into slow cooker
- Add all remaining ingredients and mix well with a spoon
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
Notes
- This recipe is written for canned beans only and won’t work with dried beans.
- Store leftovers in the fridge for up to 3 days. Freeze for up to 3 months if the pulled pork has not previously been frozen. Defrost, and reheat in the microwave or on the stove.
- If the beans are too runny at the end, combine a tablespoon of cornstarch with water and stir into the mixture until combined. Repeat with another tablespoon as needed until you reach the desired thickness.
- I cooked the baked beans for 6 hours on low in my small 2-quart slow cooker.
what size can of beans did you use? you just refer to ‘2 cans’ want to make sure i get the measurement right. this looks great!
oops! 15oz. Thanks for the catch!!
